Spiced Christmas Ginger Biscuits

Ingredients

  • 1 tub of coloured balls
  • 50 g of butter
  • 125 g of black treacle
  • 2 tsp of mixed spice
  • 225 g of plain flour
  • 1 coloured icing
  • 1 tsp of baking powder
  • 1 tsp of ground ginger
  • 50 g of brown soft sugar

Method

  • Step 1

    Lightly grease 2 baking sheets. Sift the flour, baking powder and spices into a bowl. Place the butter, sugar and treacle in a pan and melt over a gentle heat, stirring to mix.
  • Step 2

    Add the melted butter mixture to the bowl and stir until the mixture forms a dough. Knead briefly until smooth. Roll out on a lightly floured surface to about the thickness of a pound coin, and cut into shapes.
  • Step 3

    Re-roll the dough scraps and continue cutting until all the dough is used. If you wish to thread ribbon through the biscuits, make a small hole in them before baking.
  • Step 4

    Arrange on the baking sheets and cook for about 15 minutes until golden and firm. Leave on the baking tray for 5 minutes before placing on a wire rack to cool fully before icing.
