Ingredients
- 2 cardamom pods
- 100g golden caster sugar
- 120ml Malibu
- 3 limes, 2 juiced (approx. 50ml), plus 2 slices to garnish
Method
Step 1
Split the cardamom pods open and put them into a small heatproof jug with the golden caster sugar. Add 50ml boiling water and stir until the sugar is dissolved. Leave the cardamom syrup to cool, then strain to remove the pods.Step 2
Put 1 tbsp of the cardamom syrup into a cocktail shaker or clean lidded jar, with the Malibu and lime juice. Fill up with ice, put the lid on and shake hard until the outside of the container starts to frost – you want as big a movement as possible to whip air into the drink.Step 3
Strain into 2 cold glasses and garnish each with a lime slice.
