
Spiced Mushroom Bruschetta

This recipe is perfect for a light evening meal or tasty brunch and a
great way to use up bread that may be a little stale. The mild Korma
spices, earthy mushrooms and cream give an Indian twist to a classic

Ingredients
- 2 tbsp of patak's korma paste
- 1 garlic clove, chopped
- 1 onion, sliced thinly
- 1 pack of mixed mushrooms
- 300 ml of double cream
- 1 ciabatta, (slightly stale), sliced and toasted
- 1 handful of chopped coriander
- 0.5 lemon
Method
Step 1
Fry off the paste, onion and garlic for 2 minutes, add in the chopped mushrooms and fry for a further 3-4 minutes, or until the mushrooms are soft.Step 2
Add the cream and simmer until thick. Serve on toasted ciatbatte with a squeeze of lemon juice and a sprinkle of chopped coriander.
