Ingredients

  • 4 corn-on-the-cob
  • 2.5 cm piece ginger, finely grated
  • ½ red chilli, finely grated
  • 1 heaped tbsp seeded peanut butter
  • ½ lime, zested and juiced

Method

  • Step 1

    Cook the corn-on-the-cob as per pack instructions.
  • Step 2

    Meanwhile, add the ginger and chilli to a bowl. Stir in the peanut butter and lime zest and juice, then add a splash of boiling water and stir until creamy.
  • Step 3

    Slather over the corn-on-the-cob and serve.
