This Spiced Seed Mix and Parmesan
Crisps Soup Topping works really well with Roast Tomato Soup, bringing crunchy
texture and umami flavours that complement sweet tomato. The topping uses
sunflower, pumpkin and black sesame seeds, but you could experiment with other
combinations. The parmesan crisps are ready in minutes and make a great
pre-dinner nibble too.Time and servings

Ingredients
- 2 tbsp of sunflower seeds
- 2 tbsp of pumpkin seeds
- 1 tbsp of black sesame seeds
- 0.25 tsp of hot smoked paprika
- 0.25 garlic granules
- 0.25 ground cumin
- 0.5 olive oil
- 6 tbsp of finely grated parmesan
Method
Step 1
Mix the sunflower seeds, pumpkin seeds, black sesame seeds, hot smoked paprika, garlic granules and ground cumin with the olive oil. Transfer to a baking tray and bake at 200°C/180°C fan/gas 6 for about 6 mins (watch that they don’t burn).Step 2
In a bowl, mix the parmesan with some black pepper. Line a baking tray with baking paper and spread spoonfuls of the mix into 6 rounds, about 2mm deep, 2cm apart. Bake for 6-8 mins, until crisp.Step 3
Serve your soup with the seeds scattered over and the crisps on the side.
