Ingredients

  • 300g miniature new potatoes, any larger ones halved
  • ½ tbsp olive oil
  • 200g spicy sausages, sliced
  • 1 heaped tbsp caramelised red onion chutney
  • 1 tsp wholegrain mustard
  • 160g cherry tomatoes, halved
  • 140g baby leaf salad

Method

  • Step 1

    Boil the potatoes in salted water for 10 mins or until tender; drain.
  • Step 2

    Heat the oil over a medium-high heat. Add the sausage and fry for 5 mins or until golden. Toss in the potatoes to coat in the sausage oil, then stir in the chutney and mustard.
  • Step 3

    Tip in the tomatoes, stir to coat in the sticky mixture and cook for 2-3 mins until they soften. Remove from the heat; cool a little. Toss with the salad leaves and serve.
