Ingredients
- 300g miniature new potatoes, any larger ones halved
- ½ tbsp olive oil
- 200g spicy sausages, sliced
- 1 heaped tbsp caramelised red onion chutney
- 1 tsp wholegrain mustard
- 160g cherry tomatoes, halved
- 140g baby leaf salad
Method
Step 1
Boil the potatoes in salted water for 10 mins or until tender; drain.Step 2
Heat the oil over a medium-high heat. Add the sausage and fry for 5 mins or until golden. Toss in the potatoes to coat in the sausage oil, then stir in the chutney and mustard.Step 3
Tip in the tomatoes, stir to coat in the sticky mixture and cook for 2-3 mins until they soften. Remove from the heat; cool a little. Toss with the salad leaves and serve.
