
Spicy Smoked Paprika Beans

Quick and easy to make, this simple supper is packed with bold flavours and can be ready in just 20 minutes. Homemade white beans are given a spicy makeover with red onion, chilli, paprika and coriander, then simmered in passata and poured over your choice of toast. Ingredients
- 1 red onion, finely chopped
- 1 tbsp of olive oil
- 1 tsp of smoked paprika
- 1 chilli, chopped
- 400 g of passata
- 800 g of white beans, rinsed and drained
- 1 handful of coriander, chopped
- 4 slices of sourdough bread
Method
Step 1
Soften the red onion in the olive oil for a few mins. Add the smoked paprika and chopped chilli and cook for 1 min then add the passata.Step 2
Simmer for 5 mins then stir in two tins of white beans and cook for 5 mins. Stir in a handful of coriander.Step 3
Toast some bread, pile on the beans and serve.
