This afternoon; why not add a little crunch to your lunch with delicious Sweet Chili Sunbites sprinkled over spicy tomato mackerel layered on soft poached egg and wholemeal toast.

Ingredients

  • 4 slices of wholemeal seeded bread
  • 3 tins of chopped tomatoes
  • 3 cloves of garlic
  • 3 packets of sunbites sun ripened sweet chilli
  • 2 medium of red chillies
  • 2 medium of red onions diced
  • 4 medium of free range eggs
  • 4 fillets of smoked mackerel
  • 2 tablespoons of olive oil for frying

Method

  • Step 1

    Fry garlic, chillies and red onion in some olive oil. Add tomatoes and simmer.
  • Step 2

    Toast the bread.
  • Step 3

    Flake the mackerel fillet onto toast.
  • Step 4

    Pour over some of the spicy tomatoes.
  • Step 5

    Crush up the Sunbites and sprinkle over the tomato sauce.
  • Step 6

    Poach the egg and place on top, splitting the yolk so it runs on to the mackerel and tomatoes.
