
Spicy Tomato Mackerel on Toast with a Poached Egg and Sweet Chilli Sunbites

This afternoon; why not add a little crunch to your lunch with delicious Sweet Chili Sunbites sprinkled over spicy tomato mackerel layered on soft poached egg and wholemeal toast.Time and servings

Ingredients
- 4 slices of wholemeal seeded bread
- 3 tins of chopped tomatoes
- 3 cloves of garlic
- 3 packets of sunbites sun ripened sweet chilli
- 2 medium of red chillies
- 2 medium of red onions diced
- 4 medium of free range eggs
- 4 fillets of smoked mackerel
- 2 tablespoons of olive oil for frying
Method
Step 1
Fry garlic, chillies and red onion in some olive oil. Add tomatoes and simmer.Step 2
Toast the bread.Step 3
Flake the mackerel fillet onto toast.Step 4
Pour over some of the spicy tomatoes.Step 5
Crush up the Sunbites and sprinkle over the tomato sauce.Step 6
Poach the egg and place on top, splitting the yolk so it runs on to the mackerel and tomatoes.
