
Spinach and Bacon Salad with Blue Cheese Dressing

Ingredients
- 8 streaky bacon rashers
- 225 g of fresh baby spinach leaves,
- 225 g of mushrooms, sliced
- 2 spring onions, sliced
- 3 tbsp of olive oil
- 2 tbsp of red wine vinegar
- 60 g of blue cheese, crumbled
- 2 tsp of dijon mustard
- 2 tsp of shallots, finely chopped
- 1 pinch of sugar
Method
Step 1
Heat a frying pan and fry the bacon until crisp, turning occasionally. Drain on paper towels, cool and crumble, then set aside.Step 2
In a large salad bowl, combine the spinach, mushrooms and onions. Add the bacon and toss to mix.Step 3
To make the dressing, place all the remaining ingredients in a lidded jar and shake well to combine. Drizzle over the salad and toss to combine.
