
Spinach and Horseradish Cod Crumble

Ingredients
- 4 cod fillets
- 800 g of fresh spinach, blanched
- 2 tbsp of horseradish sauce
- 2 tbsp of crème fraiche
- 0.5 onion, finely diced
- 8 tbsp of coarse breadcrumbs
- 100 g of unsalted butter
Method
Step 1
Place the cod in a oven proof dish.Step 2
Season the spinach and place on top of the cod.Step 3
Place half tablespoon of the crème fraiche on top of the spinach.Step 4
In a pan melt the butter and cook the onion until soft, stirring occasionally. Add the horseradish, season and add the breadcrumb.Step 5
Mix well together and sprinkle on top of the fish. Cook in a preheated oven 190ºC/375ºF/gas mark 5 for about 30-35 minutes.
