
Spinach Dal

This hacky Spinach Dal from OcadoLife food editor Lauren Hoffman would make a great side for an Indian feast, or serve it with naan bread and pickles for a simple supper. Using shop-bought pastes along with frozen spinach and dried lentils means there’s no prep, making it super speedy. You could use your favourite curry paste – balti, tikka masala or korma would all work well.Time and servings

Ingredients
- 1 tbsp oil
- 2 tsp ginger and garlic paste
- 3 tbsp curry paste
- 300g red lentils
- 400ml coconut milk
- 250g frozen spinach
- 1 good pinch (approx.) chilli powder
Method
Step 1
Pour the oil into a large pan over medium heat, add the ginger and garlic paste and fry for 1 min. Stir in the curry paste and cook for a further min.Step 2
Add the red lentils, coconut milk and 500ml water; stir to combine. Simmer for 15 mins or until tender. Add the frozen spinach and cook for 10 mins more.Step 3
Season to taste, then serve immediately with a dusting of chilli powder if liked.
