
Spinach Falafel Wrap with Pea Shoot Salad

Your favourite takeaway lunch has nothing on this vegan-friendly wrap. Inexpensive, versatile and utterly delicious, it's packed with green goodness (pea shoots, spinach falafel), creamy houmous and crunchy radishes. Make yours the night before for a wholesome lunch the next day.Time and servings

Ingredients
- 3 spinach falafels
- 1 tortilla wrap
- 2 tbsp of houmous
- 3 radishes
- 1 squeeze of lemon
- 1 handful of pea shoots
Method
Step 1
Lay your tortilla out on a plate, smear with lemon and coriander houmous and layer on your choice of salad leaf (we chose pea shoots) followed by the falafel and sliced radish.Step 2
Finish off with a squeeze of lemon (optional). The best thing here is that you can use the extra ingredients for the next couple of lunches too! TIP: To warm it up, pop the falafel in the microwave (800W) for 1 min and the tortilla for 30 secs.
