Ingredients

  • 2 eggs
  • 145 ml of semi-skimmed milk
  • 2 tbsp of cornflour
  • 20 g of unsalted butter
  • 50 g of mature cheddar
  • 2 cloves of garlic
  • 1 pinch of sea salt
  • 1.2 kg of spinach
  • 1 pinch of ground black pepper
  • 1 pinch of ground nutmeg

Method

  • Step 1

    Preheat the oven to 170ºC. Steam the spinach until it just begins to wilt, but no longer to retain the goodness. Transfer to frying pan, add chopped garlic, butter and stir for few minutes before transferring to oven dish. Mix together milk and corn flour, bit by bit to prevent lumps forming, then add the eggs and nutmeg, salt and pepper. Pour on top of the spinach sprinkle the grated cheese and cook for 20 minutes.
