These Spooky Halloween Cupcakes from Dr.Oetker are more of a treat than a trick! The vanilla and chocolate cakes are finished with a swirl of colourful frosting in enchanting green, purple and orange – perfect for little monsters to devour.

Ingredients

  • 125ml milk
  • 1 tsp lemon juice
  • 190g unsalted butter, softened
  • 90ml sunflower oil
  • 165g light brown sugar
  • 1 medium egg
  • 2 tsp Dr. Oetker Madagascan Vanilla Extract
  • 15g Dr. Oetker Fine Dark Cocoa Powder
  • 5 drops Dr. Oetker Black Food Colouring Gel
  • 200g plain flour
  • 0.5 tsp Dr. Oetker Bicarbonate of Soda
  • 100g icing sugar
  • 200g full fat cream cheese
  • 5 drops Dr. Oetker Orange Food Colouring Gel
  • 5 drops Dr. Oetker Violet Food Colouring Gel
  • 5 drops Dr. Oetker Green Food Colouring Gel
  • 3 tbsp Dr. Oetker Sprinkle Mix

Method

  • Step 1

    Heat the oven to 180°C/ 160°C fan/ gas 4. Line 2 cupcake trays with 18 cupcake cases.
  • Step 2

    In a jug, mix together the milk and lemon juice and set aside to thicken slightly.
  • Step 3

    Put 90g butter, the oil and light brown sugar in a large mixing bowl then beat until combined and lighter in colour. Add the egg, 1 tsp vanilla extract and the cocoa powder and mix well.
  • Step 4

    Squeeze in the black food colouring gel and mix until the colour is even and well incorporated. Fold through the flour until well combined.
  • Step 5

    Add the bicarbonate of soda to the milk and lemon mixture and stir with a fork. Pour into the sponge mixture and fold through.
  • Step 6

    Divide the mixture between 18 cupcake cases and bake for 20 mins, until a skewer inserted into the centre comes out clean. Set aside to cool for 15 mins then remove from the tins and put on a cooling rack to cool completely.
  • Step 7

    Meanwhile, make the cream cheese frosting. Put the remaining 100g butter and icing sugar into a large bowl and beat together until pale in colour and smooth.
  • Step 8

    Scrape in the cream cheese and remaining 1 tsp vanilla extract and whisk together until smooth. Divide the frosting into 3 bowls. Add the violet food colouring gel to one bowl, orange to another and green to the final bowl. Mix the colour into the frosting until you have bright colours – add more colour gel if needed.
  • Step 9

    Add a stripe of each colour of frosting into a piping bag fitted with an open star nozzle, you can also just add spoonfuls of each colour alternating the colours if it is easier. Pipe a swirl of frosting onto the top of each cupcake, admire the wonderfully colourful stripey finish!
  • Step 10

    Sprinkle over the Sprinkle Mix and ta-dah you have some spooktacular cupcakes perfect for a Halloween party.
