Spice up your lunch with this quick and easy sandwich. Toasted ciabatta is paired with succulent chicken, streaky bacon and sriracha mayo for a flavour-packed snack. Try this recipe if you have leftover roast chicken to use, or keep some cooked slices in the fridge for an even faster option.Time and servings

Ingredients
- 2 chicken breasts
- 6 rashers of streaky bacon
- 2 ciabatta, small loaves, cut in half
- 2 tbsp of mayonnaise
- 1 tbsp of sriracha
- 0.5 ripe avocado, mashed
- 1 handful of baby spinach
Method
Step 1
Cook the chicken breasts and streaky bacon rashers according to pack instructions. Once cooked, shred the chicken with a fork.Step 2
Toast 4 slices of ciabatta. While they toast, mix the mayonnaise and sriracha together in a bowl and stir through the chicken.Step 3
Spread the mashed avocado between two toasted slices, then top each one with 3 rashers of bacon.Step 4
Add the chicken mixture and a small handful of baby spinach, top with the remaining slices of bread and serve.
