
St Pierre Brioche & Buttermilk Chicken Burgers with Spicy Mayo

This great burger recipe delivers the crispiest crunch from the battered chicken combined with the lightness of the St Pierre brioche and flavour kick of the spicy mayo to serve up a taste and texture sensation.Time and servings

Ingredients
- 200 g of mayonnaise, (for the spicy mayo)
- 6 st pierre brioche burger buns, sliced
- 2 skinless chicken breasts
- 2 cups of plain white flour
- 300 ml of buttermilk
- 2 tbsp of vegetable oil
- 1 clove of garlic, crushed (for the spicy mayo)
- 1 tbsp of hot pepper sauce, (for the spicy mayo)
- 0.5 red onion, finely diced, small (for the spicy mayo)
- 4 tbsp of cornichons, finely diced, to taste (for the spicy mayo)
- 1 iceberg lettuce, finely sliced
Method
Step 1
Dredge halved chicken breasts in flour, dip in buttermilk and then dredge again in flour.Step 2
Pour oil into a large heavy frying enough to cover chicken breasts. Heat over medium heat until oil is hot (test with a small piece of bread - when bread bubbles and turns golden brown the oil is ready). Fry the chicken, in batches, until golden brown and cooked through, about 4 to 5 minutes per side. Transfer to a wire rack to cool.Step 3
Prepare spicy mayo by mixing crushed garlic with mayo, and adding hot pepper sauce. Add finely diced red onions and cornichons and mix well.Step 4
Spread the brioche burger buns with spicy mayo, top with fried chicken and finish with finely sliced iceberg lettuce.
