
Steak Pasta

This creamy steak pasta is the ideal indulgent date-night recipe. It pairs perfectly with a fresh green salad and a full-bodied bottle of red wine on the side. Ribeye steak is seasoned simply with salt and pepper, pan-fried medium-rare, sliced and folded into fettuccine tossed with a rich garlic pepper sauce dotted with tender mushrooms. You can use any type of mushroom you fancy, or add in another veg you enjoy and a sprinkle of fragrant herbs such as thyme or rosemary.Time and servings

Ingredients
- 500 g of ribeye steak
- 1 tbsp of olive oil
- 160 g of fettuccine
- 2 tbsp of butter
- 4 garlic cloves, crushed or grated
- 100 ml of single cream
- 80 g of mushrooms, cut into ½ cm-thick slices
Method
Step 1
Remove the steak from the fridge an hour before cooking to bring it down to room temperature. Season it all over with ½ tbsp olive oil and a generous pinch of salt and coarsely ground black pepper, then set aside.Step 2
Bring a pan of salted water to the boil and cook the fettuccine according to the pack. While the pasta is cooking, melt 1 tbsp butter in a pan over a medium heat, then add the garlic and cook for 2 mins. Add in the single cream, 1 tsp salt and 1 tsp coarsely ground black pepper, lower the heat to a simmer for 5 mins or until the sauce begins to thicken, then take the pan off the heat and set it aside.Step 3
Heat the remaining butter and olive oil in a griddle or frying pan until smoking hot. Add the steaks and cook on each side for 2 mins for a medium-rare steak. Immediately transfer the steaks to a plate, cover and rest for 5 mins.Step 4
In the same frying pan over medium heat, add the sliced mushrooms and cook for 5 mins until golden brown all over.Step 5
Drain the pasta, reserving ¼ cup of the pasta water. Add the pasta water to the frying pan with the mushrooms, followed by the pasta sauce and gently mix everything together. Cut the steak into 1cm-thick slices against the grain, dish up the pasta into wide pasta bowls, arrange the steak slices on top and top with a generous amount of coarsely ground black pepper. Serve and enjoy.
