
Steamed Cabbage

Steamed Cabbage is a staple in Caribbean cuisine, underpinning all manner of meals frombreakfast to dinner. In this super-simple version from food writer and photographer Riaz Phillips, a mix of cabbage, radish and salad onion makes it delicious enough to enjoy on its own with rice, or try serving alongside dishes such as Curry Chicken with Green Seasoning and Golden Rice and Crispy Fried Okra.Time and servings

Ingredients
- 0.5 white cabbage (approx. 400g), finely sliced
- 6 radishes, topped, tailed and finely sliced
- 1 salad onion, finely sliced
- 1 tsp of thyme leaves or ½ tsp dried thyme
- 0.5 scotch bonnet chilli, deseeded and finely sliced (optional)
- 3 tbsp of vegetable oil
Method
Step 1
Combine the cabbage, radish, salad onion, thyme, scotch bonnet chilli and oil in a saucepan with 50ml water and ½ tsp salt and a little black pepper. Place over a medium-high heat for 2-3 mins, stirring until warmed through.Step 2
Reduce the heat to low, cover and leave to steam for 10 mins until softened, then serve.
