
Steamed chicken dumplings

A hint of chilli and ginger adds spice to this classic, low-fat Oriental dish.Time and servings

Ingredients
- 150 g of plain flour
- 0.5 tsp of sesame oil
- 1 bottle of sweet chilli sauce, for dipping
- 1 tsp of ginger paste
- 1 clove of garlic, crushed
- 1 chilli, chopped
- 2 tsps of fresh coriander
- 2 skinless chicken breasts, roughly chopped
- 4 spring onions, roughly chopped
Method
Step 1
Form a dough by mixing the flour, oil and 100ml boiling water, kneading until smooth when cool enough to handle. Set aside for 30 mins.Step 2
Pulse the chicken, spring onions, ginger, garlic, chilli and coriander in a food processor until finely chopped.Step 3
Divide the dough into 20. On a lightly floured board, roll each piece into a thin disk about 7.5 cm across. Heap a teaspoon of the chicken into the middle of each disk, brush the edges with water and pinch into half moon parcels.Step 4
Steam the dumplings for 4-5 mins until cooked through, then serve with the dipping sauce.
