Steamed Crab Pate Seabass, Minted Potatoes and Basil Pesto

Ingredients

  • 2 tbsp M&S crab pate
  • 10g basil, picked and finely chopped
  • ½ lemon, zested and juiced, plus wedges to serve
  • 2 tbsp olive oil
  • 2 sea bass fillets
  • 200g fresh spinach
  • 385g M&S Herby Minted Baby Potatoes
  • ½ tub fresh M&S Green Pesto

Method

  • Step 1

    In a small bowl, mix the crab pâté with the finely chopped basil and the lemon zest and juice.
  • Step 2

    Lay out two large squares of baking parchment. Lightly brush the centre of each with ½ the 1 and lay a sea bass fillet on top, skin-side down. Divide the crab mixture between the fillets, spreading it evenly over the top. Season with a pinch of salt and pepper. Fold the parchment over the fish to create two sealed parcels.
  • Step 3

    Set up a steamer over a pan of simmering water. Carefully place the sea bass parcels into the steamer, cover with a lid and steam for 8-10 mins, or until the fish is opaque and cooked through.
  • Step 4

    While the fish is steaming, heat the minted potatoes according to the pack instructions.
  • Step 5

    Heat the remaining 1 tbsp olive oil in a pan over a medium heat. Add the spinach with a pinch of salt and cook for 2-3 mins, until just wilted.
  • Step 6

    To serve, place the wilted spinach in the centre of each plate. Carefully unwrap the fish and place it on top of the spinach. Serve the potatoes alongside and finish with a spoonful of pesto drizzled over the fish and a lemon wedge on the side.
