
Sticky Beef and Broccoli Rice

Make a 250g pack of beef mince go further in this hearty Sticky Beef and Broccoli Rice stir-fry by author and Insta’s @cardiff.mum, Ashleigh Mogford. Cook and chill the rice the day before and the dish practically makes itself. And if you like a bit of heat, add a pinch of chilli flakes or a squeeze of hot chilli sauce along with the honey and soy. Time and servings

Ingredients
- 2 tbsp oil of your choice
- 250g lean minced beef
- ½ red onion, diced
- 1 head broccoli, florets separated
- 1 carrot, diced
- 3 large garlic cloves, minced or grated
- 2 tbsp reduced salt light soy sauce, plus extra to taste
- 1 tbsp runny honey, plus extra to taste
- 120g hoisin and garlic sauce
- 400g cooked long grain rice
Method
Step 1
Heat 1 tbsp oil in a large wok or frying pan over high heat. Tip in the beef and stir-fry for 3 mins until well coloured. Add the onion, cook for 1 min, then the broccoli and carrot. Keep it all moving for another 2 mins.Step 2
Add the garlic and stir-fry for 1 min, followed by the soy, honey and hoisin and garlic sauce, tossing everything together until the beef, broccoli and carrots are glossy and well coated.Step 3
Push everything to one side of the pan and drizzle in the remaining oil. Add the cold rice and leave undisturbed for 1 min, then stir-fry for 5 mins (approx.), or until the rice is hot throughout and coated in sauce. If the rice clumps, add a splash of hot water – the steam will help loosen it.Step 4
Season to taste, adjusting with more soy or honey as needed, then serve straight from the pan.
