
Sticky Lime & Courgette Loaf

Ingredients
- 3 medium eggs, beaten
- 175 g of self raising flour
- 1 tsp of baking powder
- 200 g of courgette, coarsely grated
- 3 limes, zested and juiced, plus one extra, zested for the syrup (optional)
- 150 g of brown sugar
- 150 g of butter, softened
- 2 tbsp of milk
- 40 g of caster sugar
Method
Step 1
Beat the butter and sugar together until soft and creamy. Add the eggs a little at a time, beating well between each addition. Sift the flour and baking powder together and then mix into the egg mixture followed by the courgettes, milk and zest of three limes.Step 2
Spoon into the loaf tin, level the top and then bake in the pre-heated oven for 50-55 minutes, until a skewer comes out clean when inserted in the centre of the loaf.Step 3
While the loaf is cooking, place the juice of three limes and the caster sugar in a pan and heat, stirring, until the sugar has dissolved. Increase the heat and boil for about 3-4 minutes until reduced and syrupy. Remove from the heat.Step 4
When the cake comes out of the oven, pierce the top all over with a skewer. Stir the remaining lime zest, if using, into the warm lime syrup and then spoon over the top of the cake.Step 5
Leave to cool, then turn out of the tin and serve in slices.
