
Sticky Tempeh Stir-fry

If you’re looking for a fast and flavoursome dish to add to your roster of midweek meals, try this Sticky Tempeh Stir-fry from Jakarta-born Rahel Stephanie, founder of Indonesian supper club Spoons: “As a kid, this sweet, sticky Javanese dish is one I’d often come home to, waiting for me on the kitchen counter with a bowl of hot rice. Ingredients
- 400g tempeh, cubed
- 1 tbsp vegetable oil, plus a drizzle
- 200g green beans, trimmed and cut into bite-sized lengths
- 2 garlic cloves, sliced
- 1 red chilli, sliced (optional)
- 2 tbsp kicap manis
- 2 (250g) packs microwave jasmine rice
- 4 pinches crispy fried onions (optional)
Method
Step 1
Preheat the air fryer to 200°C. Toss the tempeh in the oil and cook for 10-12 mins, shaking halfway, until golden and crisp.Step 2
Meanwhile, cook the green beans in boiling water for 2-3 mins until tender; drain.Step 3
In a frying pan, fry the garlic and chilli (if using) in a drizzle of oil for 1 min, until fragrant; add the kicap manis and 2 tbsp water, stirring to make a glaze. Tip the cooked tempeh and green beans into the frying pan, tossing everything to coat evenly in the sticky sauce.Step 4
Serve with microwave jasmine rice and a sprinkle of crispy fried onions, if you like.
