
Stir-Fried Lettuce with Oyster Sauce and Garlic

Side dishes don’t get much speedier than this Stir-Fried Lettuce with Oyster Sauce and Garlic by Australian chef Rosheen Kaul. “Lettuce is a fantastic vegetable for stir-frying,” she says. “It’s a Chinese restaurant classic and can sometimes even be found shredded in fried rice. Here, it’s coated in an umami-rich sauce.” Stir-fry the leaves quickly on a high heat so the lettuce keeps its colour. It makes a great match for Rosheen’s Red-Braised Pork Belly and Eggs.Time and servings

Ingredients
- 1 tbsp of vegetable oil
- 6 garlic cloves, crushed or grated
- 1 head of lettuce, such as romaine, iceberg or little gem, larger leaves torn into pieces
- 2 tbsp of oyster sauce
- 1 tbsp of soy sauce
Method
Step 1
Heat the oil in a large frying pan or wok over a high heat until smoking. Stir-fry the garlic for 10-15 secs, until fragrant.Step 2
Throw in the lettuce and stir-fry, tossing frequently, until glossy and coated in the oil.Step 3
Add the sauces and 1 tbsp water; stir-fry until the lettuce is only just wilted. Serve immediately.
