
Strawberry Brownie Rockets

Made to look like little rockets and bursting with colour, kids will love this fruity chocolate combo with kiwi.The combination of strawberries, kiwi and beetroot sneakily added to the brownie mix help towards 1 of your 5 a day. Ingredients
- 150 g of plain milk chocolate
- 50 g of butter
- 1 tsp of vanilla extract
- 2 eggs
- 100 g of soft light brown sugar
- 10 g of cocoa powder
- 75 g of self-raising flour
- 100 g of cooked beetroot, grated
- 8 kiwis
- 24 berryworld strawberries
- 24 cake pop sticks or lolly sticks
Method
Step 1
Preheat the oven to 180°C/160°C fan/gas 4.Step 2
Put 100g of chocolate and all of the butter into a bowl and place it over a pan of gently simmering water to melt. Once melted, remove from the heat and set aside to cool slightly.Step 3
Add the vanilla extract, eggs and sugar and mix well. Then add the cocoa powder, self-raising flour and grated beetroot.Step 4
Mix until well blended and spoon into a 24-hole silicone mini muffin tray. Bake in the oven for 20 mins until firm and well risen. Leave to cool, then remove from the tray.Step 5
Peel the kiwis and remove the tops. Slice each kiwi into three rounds. Trim the stalks from the strawberries.Step 6
Thread a kebab stick through one strawberry, kiwi round and brownie to create your rockets.Step 7
Melt your remaining 50g of chocolate in a bowl over a pan of gently simmering water.Step 8
Lay the rockets on a plate. Spoon the melted chocolate into a small piping bag, then pipe a zig-zag pattern over the rocket.Step 9
Chill until set, then enjoy.
