Ingredients

  • 200 g of digestive biscuits, crushed
  • 100 g of butter, melted
  • 1 tin of condensed milk
  • 300 g of full fat soft cheese
  • 2 lemons, juiced
  • 300 g of fresh strawberries, halved
  • 3 tbsp of strawberry jam

Method

  • Step 1

    Tip the digestive crumbs into a bowl. Add the butter and mix, spoon the crumbs into a 20cm loose bottomed round tin, with a minimum height of 5cm and press down. Chill for 10 mins.
  • Step 2

    Pour the condensed milk into a large bowl. Add the soft cheese and whisk together. Mix in the lemon juice . Pour into the tin. Chill for 2 hrs.
  • Step 3

    To serve, take the cheesecake out of the tin and place onto a plate. Mix the strawberry halves, with the strawberry jam - spoon the jammy berries onto the cheesecake and serve.
