Ingredients
- 200 g of digestive biscuits, crushed
- 100 g of butter, melted
- 1 tin of condensed milk
- 300 g of full fat soft cheese
- 2 lemons, juiced
- 300 g of fresh strawberries, halved
- 3 tbsp of strawberry jam
Method
Step 1
Tip the digestive crumbs into a bowl. Add the butter and mix, spoon the crumbs into a 20cm loose bottomed round tin, with a minimum height of 5cm and press down. Chill for 10 mins.Step 2
Pour the condensed milk into a large bowl. Add the soft cheese and whisk together. Mix in the lemon juice . Pour into the tin. Chill for 2 hrs.Step 3
To serve, take the cheesecake out of the tin and place onto a plate. Mix the strawberry halves, with the strawberry jam - spoon the jammy berries onto the cheesecake and serve.
