
Strawberry Cheesecake

Ingredients
- 400 g of marscapone cheese
- 225 g of strawberries
- 50 g of unsalted butter
- 100 g of dark chocolate, broken into pieces
- 150 g of digestive biscuits, crushed
- 2 limes, grated zest and juice
- 3 tbsp of icing sugar, plus extra for dusting
Method
Step 1
Melt the butter and chocolate in a small saucepan over a very gentle heat, and stir in the biscuit crumbs. Transfer the mixture to the flan tin and press it down firmly and evenly into the tin.Step 2
Beat the mascarpone in a bowl with the lime zest and juice. Stir in the icing sugar, to taste. Spread the cheese mixture over the biscuit base and refrigerate for at least 1 hour.Step 3
To serve, hull and halve the strawberries and arrange them over the cheesecake. Dust with icing sugar and cut into slices.
