Strawberry Gateau

This sweet and indulgent strawberry gateau boasts fresh summer flavours and is the perfect alfresco dessert on a hot, sunny day. Ingredients

  • 5 large eggs
  • 200 g of caster sugar, plus 2 tbsp
  • 2 tsp of vanilla extract
  • 150 g of butter
  • 220 g of plain flour
  • 600 ml of whipping cream
  • 2 tbsp of mascarpone
  • 4 tbsp of strawberry syrup
  • 250 g of strawberries, sliced, plus a handful extra, quartered, for decoration

Method

  • Step 1

    Preheat the oven to 180°C/160°C fan/gas mark 4.
  • Step 2

    Add the eggs and 200g caster sugar to a standing mixer (or use an electric whisk) and whisk on a high-speed setting for 3 mins until light and fluffy. Add 1 tsp of vanilla extract and the butter and whisk for a further 2 mins. Gently fold in the flour using a paddle attachment at a low speed, or with a large metal spoon, until it is fully incorporated into the mixture.
  • Step 3

    Divide the mixture between two 20cm cake tins lined with baking paper and carefully spread the mixture evenly in the tins. Bake in the oven for 25 mins until golden brown, then remove from the oven and leave to cool completely on a wire rack.
  • Step 4

    Add the whipping cream, mascarpone, remaining caster sugar and vanilla extract to the standing mixer and whip on a high speed for 4 mins until stiff peaks form, then chill in the fridge for 30 mins.
  • Step 5

    Place the first sponge cake layer on a plate or cake stand. If the cake has risen in the middle, you can either turn it upside down or slice the risen top off evenly using a knife. Spread the strawberry syrup across the top of the cake, then gently add a 4cm-thick layer of the whipped- cream filling. Place the second cake layer on top.
  • Step 6

    Arrange the strawberry slices around the outside of the cake, spoon the remaining whipped cream topping onto the top of the cake and decorate with a handful of quartered strawberries. Slice and serve.

    Store in an airtight container in the fridge for up to a week.
