
Strawberry mousse with strawberries marinated in lime and sumac

The lemony flavours of Middle-Eastern spice sumac add interest to this pretty, soft-set mousse. Time and servings

Ingredients
- 200 g of strawberries, hulled and sliced
- 1 lime, zested and juiced
- 1 large pinch of sumac (optional)
- 40 g of caster sugar
- 50 g of strawberry jam
- 160 ml of double cream
- 160 ml of full-fat crème fraîche
- 2 mint sprigs, leaves torn, plus extra
Method
Step 1
Place half the strawberries in a bowl, and add half the lime zest, the sumac (if using) and about 1tbsp of the sugar. Cover and set aside in the fridge to macerate while you make the mousse.Step 2
Blitz the remaining berries into a purée with the jam, lime juice and remaining zest in a blender.Step 3
In a large bowl, combine the cream, crème fraîche and remaining sugar with an electric hand whisk. Pour in the purée; continue whisking on a low speed until it forms a thick cream. Spoon into serving bowls; leave to set in the fridge for at least 1 hr or up to 24 hrs.Step 4
Just before serving, stir the mint into the strawberries. Serve cold with the mousse, scattered with more mint leaves.
