
Strawberry salad with prosciutto and halloumi

A pretty and unusual salad to make you go “oooh!”.Time and servings

Ingredients
- 80 g of baby spinach
- 400 g of strawberries, halved
- 100 g of red seedless grapes
- 4 tbsp of balsamic vinegear
- 1 tbsp of olive oil
- 400 g of halloumi, cut into 5mm slices
- 1 sprinkle of ground black pepper, to season
- 80 g of rocket
- 80 g of prosciutto di parma
Method
Step 1
Preheat oven to 200°C/180°C fan/gas 6 and line a lipped baking sheet with baking paper.Step 2
Place the strawberry halves and grapes on the baking sheet, drizzle over the balsamic vinegar and season generously with black pepper.Step 3
Put the tray in the oven and bake for 10 mins.Step 4
Heat a frying pan with the olive oil. Meanwhile, season the halloumi with black pepper.Step 5
Fry the halloumi for 2-3 mins each side, until a rich golden brown colour.Step 6
Mix together the spinach and rocket leaves and spread them out on your serving dish.Step 7
Tear the prosciutto into strips and tuck it in among the leaves.Step 8
Add the halloumi slices, followed by the roasted strawberries and grapes.Step 9
Drizzle over your ‘dressing’ – the sticky balsamic and strawberry cooking juices – along with a good glug of extra virgin olive oil.Step 10
Finally, add fresh basil leaves and a last twist of black pepper.
