
Strawberry Salad

Hot, spicy, sweet and savoury this salad is the ultimate addition to your summer spread. We’ve loaded fresh strawberries with jalapeños, herbs and creamy mozzarella for a sharing starter or side, serve with extra bread and get dipping.Time and servings

Ingredients
- 1 small red onion, finely chopped
- 2 limes, juice only
- 2 tbsp moscatel vinegar
- 1 tbsp Maldon salt
- 2 jalapeños, sliced
- 400g strawberries, half sliced, half diced
- 2 tbsp chopped mint, plus small leaves picked
- 2 tbsp chopped Thai basil, plus small leaves picked
- 250g ball mozzarella or burrata, torn
- 2 tbsp toasted, chopped pistachios
- 3 tbsp olive oil, plus extra to drizzle
- Flatbread to dip
Method
Step 1
Tip the onion into a mixing bowl then stir through the lime juice, vinegar and salt. Set aside for 10 mins for the onion to lightly pickle.Step 2
Stir in the jalapeño, strawberries and most of the herbs.Step 3
Tear the mozzarella onto a serving plate then spoon over the strawberry salad. Sprinkle with remaining herbs, plenty of black pepper and a drizzle of oil to serve.
