Ingredients

  • 300g pack strawberries
  • 150ml double cream
  • 4 tbsp maple syrup (approx.)
  • 4 tsp cocoa nibs or sprinkles (approx.), to decorate

Method

  • Step 1

    Wash the strawberries and pat dry with kitchen paper; freeze for at least 4 hrs.

  • Step 2

    Using a microplane grater and working quickly, grate the strawberries into a plastic container; freeze for 10 mins. Meanwhile, whip the cream to soft peaks.

  • Step 3

    To serve, layer up the whipped cream and shaved strawberries in 4 serving dishes, with a drizzle or so of maple syrup in-between. Finish with cocoa nibs or sprinkles.
