
Strawberry Soup

This is a bit like a posh smoothie, make sure it's well chilled before you serve it and add the strawberry squirts at the last minute.
If you want to make ice lollies just freeze the finished mixture in ice lolly moulds, lovely for hot days.This is a great recipe for children to help with, cleaning and hulling the strawberries and sieving the pips out will keep them occupied for a while.Time and servings

Ingredients
- 400 g of strawberries, washed, hulled and quartered if large
- 4 tbsp of caster sugar
- 5 tbsp of natural yogurt, low fat if you wish
- 2 limes, juiced
- 2 sprigs of mint, to serve
Method
Step 1
Place 350g strawberries, 3 tbsp caster sugar, yoghurt and lime juice in a blender and whizz until smooth, sieve into a bowl and chill.Step 2
To make the strawberry sauce, whizz together 50g strawberries and 1 tbsp caster sugar until smooth, sieve and transfer to a jug.Step 3
When you're ready to serve it, transfer the soup to bowls and squeeze drops of sauce around the edge of the bowl, use a cocktail stick to drag out one side of the droplets to look like hearts or swirls. Serve with a sprig of mint.
