
Strozzapreti Pasta and Prawns with a Luscious Tomato and Butter Sauce

Recreate chef Tony Singh’s luxurious prawn pasta recipe from M&S’s Cooking with the Stars. The rich butter sauce is boosted with sweet Sugardrop tomatoes and finished with fragrant basil and zesty lemon. Topped with succulent pan-fried chilli, garlic and paprika prawns to serve.

Ingredients
- 1 kg M&S Sugardrop Tomatoes, quartered
- 50g caster sugar
- 150g unsalted butter, cubed
- 2 sprigs rosemary, leaves finely chopped
- 1 pinch of chilli flakes (optional)
- 500g strozzapretti or fiorella pasta
- 2 (130g) packs M&S chilli, garlic and paprika prawns
- 1 tbsp olive oil
- 1 lemon, zest and juice
- 25g basil, leaves roughly torn
Method
Step 1
Put the tomatoes, sugar, butter, half the rosemary and chilli flakes (if using) in a large pan and cook over a high heat for 30 mins, stirring occasionally until soft and broken down.Step 2
Meanwhile, cook the pasta according to packet instructions. Drain, reserving a little of the pasta water.Step 3
While the pasta cooks, pan fry the prawns according to pack instructions.Step 4
Taste the sauce and season with lemon zest and juice, stir through the basil, cooked pasta and a splash of pasta water to loosen.Step 5
Divide between serving bowls and top with prawns and their juices.
