
Summer Herb and Ham Hock Frittatas

Ingredients
- 1 drizzle of olive oil, for greasing
- 4 large of eggs, beaten
- 1 clove of garlic, grated
- 1 handful of basil, finely chopped
- 1 handful of chives, finely chopped
- 1 handful of parsley, finely chopped
- 1 handful of grated cheddar or parmesan (optional)
- 90 g of ham hock
Method
Step 1
Preheat oven to 190°C/170°C fan/gas 5 and grease 6 holes of a muffin tin, or use paper cases.Step 2
Beat the eggs in a large bowl and add the garlic, chopped herbs, ham hock and cheese (if using). Season with salt and pepper and mix well.Step 3
Divide the mixture evenly between the prepared muffin holes.Step 4
Bake for 12 mins, until the frittatas are set and golden. Take out of the oven and leave to cool slightly before removing from the tin. Once cool, store in a plastic container in the fridge until you’re ready to hit the road.
