Ingredients

  • 1 tbsp of dessicated coconut
  • 1 tbsp of groundnut or sunflower oil
  • 0.5 onion, chopped
  • 1 clove of garlic, peeled and chopped
  • 0.5 green chilli, deseeded and chopped
  • 1 tsp of curry powder
  • 350 g of peeled raw prawns
  • 400 ml of light coconut milk
  • 3 limes, juiced
  • 1 pinch of salt
  • 1 good handful of fresh coriander, chopped
  • 1 pinch of pepper

Method

  • Step 1

    In a large pan, heat the oil and sweat the onion and garlic for a few minutes.
  • Step 2

    Add the chilli and curry powder and cook on low for another few minutes.
  • Step 3

    Add the prawns and cover with the coconut milk. Cook for 10 minutes.
  • Step 4

    Stir in the lime juice and desiccated coconut.
  • Step 5

    Taste and season, and when you are ready to serve, cover with the coriander.
