
Summer Suppers: Coconut Curry with Prawns

Ingredients
- 1 tbsp of dessicated coconut
- 1 tbsp of groundnut or sunflower oil
- 0.5 onion, chopped
- 1 clove of garlic, peeled and chopped
- 0.5 green chilli, deseeded and chopped
- 1 tsp of curry powder
- 350 g of peeled raw prawns
- 400 ml of light coconut milk
- 3 limes, juiced
- 1 pinch of salt
- 1 good handful of fresh coriander, chopped
- 1 pinch of pepper
Method
Step 1
In a large pan, heat the oil and sweat the onion and garlic for a few minutes.Step 2
Add the chilli and curry powder and cook on low for another few minutes.Step 3
Add the prawns and cover with the coconut milk. Cook for 10 minutes.Step 4
Stir in the lime juice and desiccated coconut.Step 5
Taste and season, and when you are ready to serve, cover with the coriander.
