A twist on the classic fish finger sandwich, this scampi, avo and wasabi concoction is inspired by Japanese flavours for a new take on lunch or brunch. Shichimi togarashi is an aromatic spice blend containing chilli, seaweed and sesame, that can power up everything from noodles to seafood. Ingredients
- 300g frozen breaded wholetail scampi
- 4 slices white sourdough
- 2 tbsp wasabi mayo
- ½ avocado, finely sliced
- 2 pinches shichimi togarashi, for sprinkling
Method
Step 1
Preheat the oven and cook the scampi to packet instructions, turning halfway, until golden.Step 2
Lightly toast the bread, if you like, and arrange the slices in pairs. Spread the inside of each slice with wasabi mayo, then divide the scampi and avocado between the bottom halves. Sprinkle with shichimi togarashi to taste, then sandwich with the lids, cut the sarnies in half and tuck in.
