
Sweet & Juicy Mediterranean Tart with Sauerkraut

A simple
supper that’s ready in just 30 minutes. The Cultured Collective’s Original
Sauerkraut adds a tart and tangy, gut-loving addition to sweet roasted cherry
tomatoes and creamy feta. Be sure to keep any leftovers for tomorrow as this
tart works beautifully hot or cold. Simply serve with a side of leafy greens.Time and servings

Ingredients
- 50 g of original sauerkraut
- 280 g of puff pastry
- 600 g of cherry tomatoes
- 50 g of pitted kalamata olives
- 50 g of feta cheese, crumbled
- 1 tbsp of extra virgin olive oil
- 1 dash of salt, to taste
- 1 dash of pepper, to taste
- 1 sprig of fresh thyme
Method
Step 1
Preheat oven to 200˚CStep 2
Halve the cherry tomatoes and toss them in olive oil before scattering onto a baking tray. Season and place in the oven for 5 minutes to soften.Step 3
Meanwhile lay or roll your pastry onto a baking tray lined with baking paper. With a knife, score a line 2cm in from the edge of the sheet around the entire edge to create a border. Lightly prick the area of pastry inside the border a few times with a fork.Step 4
Roughly chop the olives.Step 5
Assemble the partially cooked cherry tomatoes on the pastry inside the scored line. Scatter the feta, thyme and sliced olives on top. Place in the oven and bake for 12-15 minutes until the borders are risen and golden brown.Step 6
Top with Original Kraut to serve
