These Sweet & Sour Cashews are a moreish combination of buttery nut and tangy tamarind, with a hit of chilli. Created by Kate Calder, author of Three Ingredient Cocktails: 60 Drinks Made In Minutes (And Snacks To Go With Them), they’re a flavour-packed take on a traditional bar snack and pair well with cooling drinks, from a chilled beer to Kate’s green tea-inspired G & Tea.

Ingredients

  • 250 g of unsalted cashew nuts
  • 0.25 chilli powder
  • 1 tbsp of soy sauce (or tamari if required for gluten free)
  • 1 tsp of tamarind paste

Method

  • Step 1

    Preheat the oven to 180°C/160°C fan/gas 4. Line a baking tray with baking paper
  • Step 2

    In a bowl, toss the cashews with the chilli powder, soy sauce and tamarind until coated. Spread out on the baking tray and roast for 8 mins, then cool. The nuts keep in an airtight container for 1 week.
