
Sweet and Sour Gammon with Stir-fried Veg

Switch up a midweek stir-fry with this gluten-free Sweet and Sour Gammon with Stir-fried Veg, from Celebrity MasterChef winner Lisa Faulkner. A jar of sweet and sour sauce does double duty – as a marinade for the meat, and as a sauce to sizzle your veg. It gives the gammon a lovely sticky glaze and complements its flavour perfectly. Ingredients
- 500 g of brown rice, to serve (optional)
- 100 g of beansprouts
- 2 tbsp of vegetable oil, plus 1 tsp
- 1 (450g) jar sweet and sour sauce
- 2 unsmoked gammon steaks, fat trimmed
- 100 g of baby corn, sliced diagonally
- 2 pak choi, leaves and stem separated, both roughly chopped
- 100 g of tenderstem broccoli
- 1 tbsp of sesame oil
- 4 salad onions, trimmed and sliced
- 75 g of mangetout
- 1 carrot, peeled into ribbons
Method
Step 1
Put the gammon steaks into a shallow dish; pour over one-third of the sweet and sour sauce (use the sauce only, hold back the veg in the jar with a spoon). Leave to marinate for 30 mins or up to 2 hrs.Step 2
Heat 2 tbsp vegetable oil in a large non-stick frying pan over a medium-high heat. Fry the gammon steaks for 3-4 mins each side until cooked through and lightly charred. Remove and leave to rest.Step 3
Give the pan a quick wipe and heat 1 tsp vegetable oil and the sesame oil. Add the broccoli, pak choi stems and baby corn and stir-fry for 3-4 mins. Tip in the carrot, mangetout, salad onions, beansprouts and pak choi leaves; stir-fry for 1 min more.Step 4
Add the rest of the jar of sauce, including all the veg, to the pan, along with a splash of water to loosen, and cook for 2-3 mins. Season with salt and pepper and add a bit more water if needed.Step 5
Slice the gammon steaks into strips and serve on top of the stir-fried veg, with brown rice, if you like.
