Ingredients

  • 2 (400g) tins chickpeas, drained, rinsed and patted completely dry
  • 1 tbsp cornflour
  • 2 tbsp olive oil
  • 1 tsp sesame seeds
  • ½ tsp chilli flakes
  • ½ tsp ground cinnamon
  • ½ tsp sea salt flakes
  • ¼ tsp coarse black pepper
  • 50g blanched almonds
  • 1 tbsp honey

Method

  • Step 1

    Preheat the oven to 220°C/200°C fan/gas 7. Put the chickpeas and cornflour into a sealable container and give them a good shake to fully coat. Add the oil, shake well again, then follow with the sesame seeds, chilli flakes, cinnamon, sea salt and black pepper; shake well.
  • Step 2

    Line a large baking tray with baking paper and tip the chickpeas onto it in a single layer. Bake for 20 mins on the bottom shelf. Give the tray a gentle shake and turn the oven down to 180°C/160°C fan/gas 4. Cook for 10 mins more.
  • Step 3

    Add the almonds to the tray, drizzle over the honey and toss well to coat. Bake for a further 10 mins, keeping an eye out so the mixture doesn’t burn. Leave to cool and crisp up before eating.
