
Sweet Chilli Fish Cakes

A delicious way to use up leftover fish, this quick and easy family favourite tastes even better drizzled with new Heinz Sweet Chilli Sauce.Time and servings

Ingredients
- 1 shallow bowl of plain flour
- 1 lemon
- 2 spring onions, sliced finely
- 2 eggs
- 1 pack of white breadcrumbs, around 200g
- 2 tbsp of heinz sweet chilli sauce, plus extra for dipping
- 200 g of white fish or salmon, cut into small dice
- 600 g of potatoes, peeled, boiled and mashed
Method
Step 1
First peel and boil the potatoes as you would when making mash. When cooked, drain, dry and mash the potatoes. When the potato is cool, mix in the diced up fish, the juice and zest of half a lemon, the Heinz Sweet Chilli sauce and the sliced onion. Season to taste.Step 2
Combine well and if necessary gradually add breadcrumbs until the mix is thick enough to mould into fish cakes.Step 3
Netx pass the cakes through flour, beaten egg and then breadcrumbs.Step 4
Fry in hot oil at 180C until golden, or alternatively bake in a hot oven at 200C.Step 5
Serve with salad as a light dinner, or with Heinz Sweet Chilli Sauce as a dip.
