Ingredients
- 100g cherry tomatoes, halved
- ½ tsp chilli flakes
- 5 cm piece ginger (approx. 15g), coarsely grated (no need to peel)
- 2 tbsp granulated sugar
- ½ (500g) pack courgettes, coarsely grated
- 200g radish, roughly sliced
- 1 red onion, finely sliced
- ½ (200g) tub sour cream and chive dip
- 10g mint, leaves finely chopped
- 15g coriander, finely chopped (stalks and all)
- ½ lemon, juiced
- 375g (approx.) roast ham, shredded
- 6 soft white rolls
Method
Step 1
For the chilli sauce, bring 250ml water to the boil in a small saucepan. Add the tomatoes, chilli and ginger; simmer until reduced by half. Blitz to a purée using a stick blender, then add the sugar and simmer for 3-5 mins more until thickened and shiny. Leave to cool.Step 2
Meanwhile, for the slaw, combine the courgette, radish and a good pinch of salt and black pepper in a sieve set over the sink. Leave to soften and drain for 10 mins, then add to a bowl with the red onion. Mix in the sour cream and chive dip, then fold through the mint and coriander, reserving 1 tbsp of the chopped coriander for the chilli sauce.Step 3
Stir the lemon juice into the cooled chilli sauce, along with the reserved coriander. Fold in the shredded ham until well coated.Step 4
To assemble, pile the sticky ham into the buns and top with the slaw; serve.
