
Sweet Potato and goat's cheese jackets

This dish takes the classic jacket potato to a whole new level with goat’s cheese and a handful of mushrooms mixed in for a filling meat alternative.Time and servings

Ingredients
- 150 g of rocket
- 180 g of goat’s cheese, sliced
- 2 tbsp of olive oil, plus extra for rubbing
- 4 medium to large sweet potatoes
- 170 g of mushrooms
- 1 garlic clove, crushed
- 200 g of anitpasti, mixed
- 1 lemon, juiced
Method
Step 1
Preheat the oven to 220ºC/200ºC Fan/gas mark 7. Rub 1 tbsp olive oil over the potatoes and sprinkle with some sea salt. Make a cut through the middle of each and then place onto a baking tray.Step 2
Pop in the oven for 30 minutes to cook. 5 minutes before the potatoes are ready, gently fry the mushrooms and garlic together in the remaining 1 tbsp oil for 2 minutes.Step 3
Split the potatoes open, and pile the mushrooms, goat’s cheese and antipasti into each potato.Step 4
Add the rocket to the plates, season and drizzle some oil from the antipasti tub over and a squeeze of lemon. Serve immediately.
