
Sweetcorn & Coriander Fritters - Gluten Free

Best served warm, these fritters are delicious with a yogurt raita or a sweet chilli sauce.Time and servings

Ingredients
- 300 g of gram flour
- 198 g of canned sweetcorn, drained
- 2 handfuls of coriander, chopped
- 0.25 tsp of bicarbonate of soda
- 0.25 tsp of chilli flakes
- 1 sprinkle of paprika
- 4 tbsp of ground nut oil
Method
Step 1
Combine all the ingredients in a mixing bowl, gram flour, coriander, sweet Corn, bicarbonate of soda, chilli flakes, paprika.Step 2
Season with sea salt and black pepper.Step 3
Gradually add ½ a pint of water, you might need a little extra.Step 4
Set the thick batter aside for 5 minutes.Step 5
Heat a frying pan with the ground nut oil, using a heaped tablespoon carefully spoon in the mixture into the oil.Step 6
Fry for approximately 2 minutes on each side, until the fritters become medium brown & crisp, drain thoroughly on kitchen paper towel.
