Ingredients

  • 100 g of red cabbage, finely chopped or grated
  • 1 small green pepper, seeded, thinly sliced and chopped
  • 1 small carrot, scrubbed and grated
  • 25 g of cashew nuts, cut into pieces
  • 1 tbsp of lemon juice
  • 25 g of sultanas, or other seasonal fruit
  • 50 ml of soya yoghurt
  • 450 g of long grain brown rice, cooked
  • 50 ml of tahini (sesame paste)

Method

  • Step 1

    Combine the rice with the red cabbage, green pepper, carrot, sultanas and cashew nuts.
  • Step 2

    Combine the tahini, yoghurt and lemon juice. Season to taste with salt and black pepper.
  • Step 3

    Pour the dressing over the salad and mix well.
