
Tahini, Nut and Vegetable Rice Salad

Ingredients
- 100 g of red cabbage, finely chopped or grated
- 1 small green pepper, seeded, thinly sliced and chopped
- 1 small carrot, scrubbed and grated
- 25 g of cashew nuts, cut into pieces
- 1 tbsp of lemon juice
- 25 g of sultanas, or other seasonal fruit
- 50 ml of soya yoghurt
- 450 g of long grain brown rice, cooked
- 50 ml of tahini (sesame paste)
Method
Step 1
Combine the rice with the red cabbage, green pepper, carrot, sultanas and cashew nuts.Step 2
Combine the tahini, yoghurt and lemon juice. Season to taste with salt and black pepper.Step 3
Pour the dressing over the salad and mix well.
